Turkey Patties Dijon
   

Combine turkey and next 5 ingredients in a bowl. Mix gently and shape into 4 patties. Melt butter in a heavy nonstick skillet over medium high heat. Cook patties 4-5 minutes per side, until golden brown outside and cooked throughout. Transfer patties to a platter, leaving drippings in pan. Stir wine into same skillet and boil 1-2 minutes over high heat, stirring up browned bits. Serve sauce over patties.

Steamed Italian Broccoli
   

Place broccoli in a steamer basket over boiling water. Cover saucepan and steam 5 minutes or until broccoli is tender. Drain and return broccoli to pan. Add dressing. Season with salt and pepper to taste and toss.

Grilled Tuna
   

Prepare griller. Combine first 4 ingredients and salt to taste in a bowl. Mix thoroughly and set aside. Press peppercorns into both sides of tuna steaks. Arrange tuna on a rack and grill 4 minutes per side or until tuna is browned on the outside and slightly pink on the inside. Remove from heat. Serve tuna steaks with mint sauce.

Parmesan Catfish
   

Combine buttermilk and half the Parmesan in a bowl. Dust catfish with flour, salt and pepper to taste. Dip both sides of fish in buttermilk mixture. Combine breadcrumbs and remaining Parmesan on a piece of waxed paper. Dredge both sides of fillets in breadcrumbs. Heat oil in a heavy nonstick skillet over medium high heat. Sauté garlic 1 minute. Discard garlic and sauté catfish 4-5 minutes or until golden. Turn and sauté another 3-4 minutes or until fish flakes easily.

Couscous with Tomato
   

Boil stock and butter in a saucepan over high heat. Stir in couscous and remove pan from heat. Cover pan and let stand 5 minutes. Stir in remaining ingredients and salt and pepper to taste. Fluff with a fork before serving.

Black Bean, Corn and Tomato Salad
   

Combine lemon juice, oil and salt to taste in a jar with a tight fitting lid. shake vigorously. Place corn in a steamer basket over boiling water. Cover pan and steam 3-4 minutes, or until just cooked. Drain and combine with remaining ingredients, except lettuce. Season with salt and pepper to taste. Set aside 15 minutes, stirring occasionally. Serve salad over lettuce leaves.

Quick Beef Sausages
   

Combine baking soda and stock in a bowl until dissolved. Add remaining ingredients and salt and pepper to taste. Knead with your hands until well blended. With hands rinsed in cold water, form mixture into 8 compact sausages about 3 inch long and 1-1/2 inch thick. If desired, cover and refrigerate until ready to serve, up to 24 hours. Prepare grill or broiler. Grill or broil sausages 4 inches from heat source about 5 minutes, or longer if desired.

Quick Baja Pizza
   

Preheat oven to temperature 450°F. Spread pizza sauce over pizza crust. Arrange shrimp, onion and peppers over top and sprinkle with cheese. Bake 10 minutes or until golden.

Spinach Salad with Mushrooms
   

Combine spinach, mushrooms and tomatoes in a salad bowl. Pour dressing over salad and toss.

Easy Chili
   

Combine all ingredients, except sour cream, in a heavy nonreactive saucepan over medium high heat. Season with salt and pepper to taste. Bring to a boil. Reduce heat to low and simmer 3-4 minutes, or until corn and onions are tender. Serve with sour cream.
