Cold Wholesome Soup

Recipe Cold Wholesome Soup

Ingredients

3 tomatoes firm and ripe 1 cucumber finely chopped 1 spring onion with greens finely chopped 1 onion finely chopped 1 stalk celery finely chopped 1 small carrot finely chopped 1 stalk lemon grass finely chopped 1 sprig mint leaves finely chopped 1 small green chilli finely chopped 1 tbsp. cornflour 3 cups water 1 tiny flake garlic, crushed fine 2-3 pinches cinnamon clove powder 1 tsp. sugar Salt to taste Pepper to taste

Method

Steam or microwave tomatoes till soft. Peel off skin on cooling. Blend to a smooth puree. Blend cornflour in 1/2 cup water. Boil remaining water, add cornflour paste, cook till transparent. Cool, stirring frequently so no 'skin' forms on top. Add puree, blend well. Add all other ingredients, mix well, refrigerate. Chill very well before serving. Serve with cheese fingers, nachos, or even croutons.

Tamarind Raita
   

Soak tamarind in a litre of water for an hour. Add jaggery and mix well till dissolved. Strain taking care not to pour in the sandy sediment. Add onion to tamarind water. Add all other ingredients, except seeds, ghee and asafetida. To season, heat ghee in a small saucepan. Add seeds and asafetida, allow to splutter. Pour over raita and cover immediately. Allow to cool, open and mix well. Chill for an hour before serving. Note: This dish forms an excellent cooler in scorching summer heat. If jaggery is not your cup of tea, just substitute with light brown sugar.

Morning Sip
   

Mix all the ingredients Beat together with electrical hand blender till foamy Sip and stay cool for the day ahead.

Baingan Raita
   

Prick brinjal all over with a fork or skewer. Either direct roast over gasflame or in an oven till soft. Allow to cool, chop fine. Beat curds till smooth. Beat in milk. Add all other ingredients, save some coriander. Fold in chopped brinjals, gently mixing. Chill in a large serving bowl. Garnish with remaining coriander. Serve chilled as an accompaniment.

Cantaloupe Milkshake
   

Halve melon, remove seeds, but retain inner juice if any, by straining. Peel and finely chop one cup melon. Chop remaining into big pieces, place in electric blender. Add sugar, icecream, milk/cream/water, ice, depending on whether you want juice or shake. Blend till smooth and frothy. Serve immediately, putting a tsp. of chopped melon in each. Top with more icecream if desired.

Gazpacho
   

Place tomatoes in boiling water. Cover and keep aside for 10 minutes. Drain, chop and blend to a smooth puree. Strain, add 4 cups water, mix well, cool. Mix with a spoon: sauces, oil, cream, garlic, sugar, mint, till well blended. Add to tomato puree, add pepper and more salt if necessary, mix well, chill. Before serving fold in chopped vegetables. Serve chilled with small bread croutons if desired.

Mixed Lentil Chiller
   

Drain out all water from boiled peas,channa, moong. Put all ingredients in a large glass bowl, except curds and both chutneys. Chill without stirring for at least 20 minutes. Beat curds till smooth, add chutneys, mix till blended. Pour over contents of bowl. Mix gently, garnish with a bit more coriander. Serve chilled as a side dish, a snack on a hot evening, or as an accompaniment.

Spicy Buttermilk
   

Beat curds with hand whipper till smooth. Add water, churn well till mixed. Place ginger in a muslin cloth, hold it like a pouch. Rub into buttermilk to allow ginger juice to blend into it. Add salt. Break chilli into two halves. Heat a small pan, add oil. When hot, add seeds, asafetida, allow to splutter. Add curry leaves, chilli, and pour while sizzling, in buttermilk. Dip pan in buttermilk if possible, remove. Add coriander leaves, stir to mix everything. Pour into a large ceramic, glass or earthen pot or jug. Chill for one or two hours till required. Serve in tall chilled glass or with icecubes after a summer lunch. Or serve in deep bowls, for rice to be added, and eaten as a cool rice dish.

Peanut Salad
   

Wash peanuts, add water, pressurecook for 2-3 whistles. Nuts should be cooked, but firm and not mushy. Drain, wash under running water. Allow all water to drain in colander for 10 minutes. Take in a large salad bowl, add all other ingredients. Toss well till flavours blend, refrigerate till chilled. Serve chilled as a filling salad.

Ragi Drink
   

Boil ragii flour in 1 cup water, for 5-7 minutes, adding more water as required. Cool to room temp. Put mixture in a blender. Add salt, pepper, a dash of sugar, and chilled water or crushed ice. Blend till smooth and frothy. Serve chilled as an instant refresher

Sago Pudding
   

Run dry chinagrass flakes in a mixie to break into a powder. Soak in 1 cup water, keep aside till it bloats. Loosen sago to separate each grain, keep aside. Heat milk, bring to a boil, simmer for 5 minutes. Add sago grains, stir well, to avoid lumps forming. Simmer on low till sago becomes transparent. Add sugar, mix, add all other ingredients. Cool to room temperature, stirring gently, frequently. Chill till well set and firm. Do not overfreeze or icecrystals will form. Cut and serve slices as a refreshing light in-between.
